Pan-fried Tandoori Aubergine

Serves 4


  • 50g (half a pot) Ambu Tree tandoori marinade
  • Two large aubergines sliced into thin circular/oval shapes
  • Sunflower (or vegetable) oil

Cooking Method

  1. Mix 50g tandoori marinade with 1-2 tablespoons of oil.
  2. Rub this mixture in a thin layer onto both sides of sliced aubergine. (Can use straight away or for deeper flavours, you can marinade for up to 3-4 hours.)
  3. Pan-fry the aubergines in single layer batches. Pan fry with a little oil / cooking spray on a low to medium heat for 3-5 minutes each side. Ensure you regularly press down on the aubergine slices to releash their juices into the pan during the cooking process.

Sprinkle with finely chopped coriander and serve as a side dish with any Indian meal.
